1 teaspoon baking soda

Drain the can of chickpeas.

Cover the chickpeas with water and add 1 teaspoon of baking soda.

Bring to a boil and cook for about 10 minutes, removing floating skins with a slotted spoon.

Reserve a little of the canned liquid (aquafaba) for texture adjustment.

In a blender, combine the chickpeas, garlic, lots of lemon juice, tahini, and salt.

Blend until smooth, adjusting texture with reserved aquafaba, water, more lemon juice, or olive oil as needed.

Serve hummus as is or garnish with olive oil, pepper, paprika, and lemon zest.
