Baked Oatmeal with Berries and Walnuts

1 ¾ cups milk
⅓ cup honey
2 large fresh eggs
3 T toasted walnut oil
3 t (1 T) vanilla extract
2-3 cups fresh berries
2 cups old-fashioned rolled oats
1 cup toasted walnuts, chopped
2-3 T chia, flax, hemp seed blend
1-2 t ground ginger
2-3 t ground cinnamon
1 t baking powder
⅓ t salt

Preheat oven to 350 °F and toast walnuts for about 10 minutes.

Whisk wet ingredients (milk, honey, eggs, walnut oil, and vanilla extract) in a small bowl.

Reserve a little walnut oil for lining the baking dish.

Add dry ingredients (oats, walnuts, chia/flax/hemp seed blend, ground ginger, ground cinnamon, baking powder, and salt) to a large mixing bowl.

Pour in wet ingredients and blend well.

Pour into greased baking dish, gently blend in fresh berries, and top with more nuts and fruit if desired.

Bake for about 35-40 minutes.
