Strawberries and Cream Baked Oatmeal

Cut the green tops off the strawberries and slice them into 1/8 inch thick slices.

Place the sliced strawberries in a large bowl and add 2 tsp of sugar (or 1 tsp of non-nutritive sweetener). Stir to combine and set aside to marinate.

In another large bowl, combine 3 cups of rolled oats, 60 g of vanilla whey protein powder, and 1 tsp of baking powder. Stir until well incorporated.

Add 150 g of liquid egg whites, 480 g of milk, 42 g of maple syrup, 14 g of melted butter, and 3/4 of the marinated strawberries to the oat mixture. Stir until well combined.

Spread the mixture evenly into a greased 13x9 baking dish.

Top with the remaining strawberries for presentation (optional).

In a bowl, combine 113 g of cream cheese with 20 g of sugar. Soften the cream cheese in the microwave for easier mixing.

Spoon the cream cheese mixture over the top of the oatmeal and swirl it around for better coverage.

Bake at 375°F (190°C) for 35-40 minutes until set in the center.

Allow to rest for about 10 minutes before cutting into six slices.
