Garlic Rosemary Grilled Lamb Chops

Add 1/4 cup of olive oil to a small bowl.
Add 3 minced garlic cloves to the bowl.
Add 1 tablespoon of finely chopped fresh rosemary to the bowl.
Add 1 teaspoon of kosher salt and 1/2 teaspoon of ground black pepper to the bowl.
Stir the marinade ingredients together.
Separate the lamb chops from the rack using a sharp chef's knife, slicing between the bones.
Add the separated lamb chops to a baking dish.
Pour the marinade over the lamb chops, ensuring both sides are well coated.
Marinate the lamb chops in the fridge for about 30 minutes.
Prepare the mint applesauce by blending together 1/2 cup packed mint leaves, 3 sprigs of parsley, 1 cored and sliced granny smith apple, 1/3 cup olive oil, and 1 tablespoon fresh lemon juice until it looks like applesauce.
Heat an outdoor grill or indoor grill pan on medium-high heat, and oil the grates or pan to prevent sticking.
Place the marinated lamb chops on the grill, pushing them down for good contact.
Grill the lamb chops for about 3 minutes on one side, then flip them and grill for another 3 minutes.
Remove the lamb chops from the grill and place them on a serving plate.
Optionally, add a few sprigs of rosemary to the serving plate for garnish.
