15g of chopped chives
1 lemon quartered

Place salt and flour in a mixing bowl & tip the whitebait and its juices over the flour and mix, completely dusting the whitebait.

Heat a large heavy based frying pan over a medium-high temperature.

Add the butter, melt, then get the butter foamy and light brown.

Quickly add the whitebait and toast in the hot butter, move the whitebait in the pan so it cooks evenly.

When the whitebait is golden brown, add the lemon quarters and toast the lemon in the whitebait, season with the cracked pepper.
