Hummus

Cultural Context

Hummus has its roots in the Levant region, particularly Lebanon, where it is a staple in many households. Traditionally served as a mezze, it brings people together, often enjoyed with pita bread or fresh vegetables. Today, hummus has gained international popularity, with countless variations and flavors appearing worldwide.

LBLBside
6 servings
Servings4
1 can chickpeas
aquafaba (chickpea water)
lemon juice
salt
cumin
extra virgin olive oil (optional)
1

Open the chickpea can and save the aquafaba by draining it into a white bowl.

2

Rinse the chickpeas to remove excess salt.

3

In a blender, combine aquafaba, lemon juice, salt, and cumin. Blend for 30 to 45 seconds until mixed.

4

Add the drained chickpeas to the blender and blend for 2 to 3 minutes until smooth.

5

Check the consistency of the hummus; if not light and fluffy, add 1 tablespoon of aquafaba and blend again.

6

Repeat the process of adding aquafaba and blending until the desired smooth and fluffy texture is achieved.

7

Transfer the hummus to a small bowl, scraping the sides of the blender to avoid wasting any hummus.

8

Optionally, drizzle extra virgin olive oil on top for garnish before serving.
