Curried Cauliflower Soup

3 Macintosh apples
1 yellow or white onion
1 head of cauliflower
coconut milk
saffron
curry powder
water or chicken stock or vegetable stock
olive oil

Peel and core the Macintosh apples, then slice them roughly.

Break down the cauliflower into small florets, keeping some for garnish.

Peel and slice the onion.

Prepare all vegetables ahead of time: apple, cauliflower, onion, coconut milk, curry, saffron, and water or stock.

Warm up the water and coconut milk together.

Heat olive oil in a pot over medium-high heat.

Add the sliced onion to the pot and sweat until halfway translucent.

Add curry powder and saffron to the onions and sweat together without coloring.

Add the sliced apples to the pot and sweat them with the onions and spices.

Season with salt and pepper while sweating the vegetables.

Reduce heat to medium and continue sweating until the apple and onion are softened and translucent.

Add the cauliflower to the pot and mix well with the base of apple and onion.

Pour in the warmed water and coconut milk mixture, bringing the soup back to a boil.
