Curried Cauliflower Soup

1 medium cauliflower, chopped
1 onion, diced
2 cloves garlic, minced
1 tbsp fresh ginger, grated
2 tbsp curry powder
4 cups vegetable broth
1 can (14 oz) coconut milk
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional)
Fresh cilantro for garnish

Heat olive oil in a large pot over medium heat.

Add diced onion and sauté until translucent, about 5 minutes.

Stir in minced garlic and grated ginger, cooking for another minute until fragrant.

Add chopped cauliflower and curry powder, stirring to coat the cauliflower with the spices.

Pour in the vegetable broth and bring to a boil.

Reduce heat and simmer for 20 minutes, or until the cauliflower is tender.

Remove from heat and stir in the coconut milk, salt, black pepper, and cayenne pepper if using.
