Cut beef into long, thin strips.

Grind 4-5 small cinnamon sticks, 2 large cardamom pods, 1 small piece of nutmeg, and 8-10 cloves into a fine powder to make garam masala.

In a bowl, combine 3 tablespoons ginger, 1/2 cup finely ground onion, 1 cup chopped onion, 2 teaspoons red chili powder, 1 teaspoon black pepper powder, 1.5 tablespoons salt, and the prepared garam masala powder.

Add 1/2 cup yogurt and 1/3 cup mustard oil to the mixture and mix well.

Marinate the beef in the mixture and let it sit for at least 1 hour, preferably overnight.

Three hours before cooking, add 4 tablespoons of papaya paste to the marinated beef and mix well.
