Cut beef into bite-sized pieces and rinse under cold water.

Soak beef in cold water for 30 minutes to remove excess blood.

In a large pot, add soaked beef and cover with water; bring to a boil over high heat.

Skim off any foam that rises to the surface for a clearer broth.

Add sliced daikon radish, onion, and garlic; reduce heat to medium and simmer for 1-1.5 hours until beef is tender.

Add soy sauce, salt, and black pepper to taste; stir well.

In the last 10 minutes, add sliced carrots and mushrooms for additional flavor and texture.

Adjust seasoning as needed; add red pepper flakes for heat if desired.

Remove from heat and let sit for a few minutes to allow flavors to meld.

Serve hot, garnished with chopped green onions and toasted sesame seeds.
