1 Cup Baisan (Gram flour)
2 tbs Chawal ka atta (Rice flour)
½ tsp Zeera (Cumin seeds) roasted & crushed
½ tsp Himalayan pink salt or to taste
½ tsp Lal mirch powder (Red chilli powder) or to taste
1 tbs Sabut dhania (Coriander seeds) crushed
¼ tsp Baking soda
¼ tsp Zarda ka rang (Orange food color)
¼ tsp Ajwain (Carom seeds)
1-2 tbs Hara dhania (Fresh coriander) chopped
½ Cup Water or as required
Boiling water as required
1 tsp Himalayan pink salt
3-4 medium Aloo (Potatoes) thick slices
Cooking oil for frying
1 & ½ tsp Podina (Mint leaves) dried & crushed
½ tsp Lal mirch (Red chilli) crushed
1 tsp Chaat masala
¼ tsp Kali mirch powder (Black pepper powder)

In a bowl, add gram flour, rice flour, cumin seeds, pink salt, red chilli powder, coriander seeds, baking soda, orange food color, carom seeds, fresh coriander, gradually add water & mix until well combined, cover & let it rest for 15-20 minutes.

In boiling water, add pink salt & mix well.

Add potatoes & mix well, cover & blanch for 2 minutes then strain & set aside.

In a wok, heat cooking oil, dip blanched potatoes in prepared pakora batter & fry on medium flame until golden & crispy.

In a small bowl, add mint leaves, red chilli crushed, chaat masala, black pepper powder & mix well.

Sprinkle prepared spice mix on qatli pakora & toss well.

Serve with chutney!
