Light coconut milk reduces calories while keeping some creaminess.
Boil salted pigtails for 20 minutes three times, draining and washing thoroughly after each boil.
Cut the breadfruit into smaller pieces, removing the core and peeling the skin.
Pre-boil the breadfruit in lightly salted water for 20 minutes until tender (optional).
Chop the boiled pigtails into smaller pieces after rinsing.
Make a green seasoning by blending garlic, shadow benny, pimento seeds, and cilantro.
Mix the green seasoning with the chopped pigtails.
Chop spinach into small pieces.
Heat vegetable oil in a pot over medium heat and sauté the pigtails until browned, about 15 minutes.
Add chopped onion and sauté for about 2 minutes.
Add garlic, chopped leafy celery, and thyme, mixing well for about 1.5 minutes.
Add chopped scotch bonnet pepper and mix well.
Add the browned pigtails back to the pot, followed by pre-boiled breadfruit chunks.
Pour in coconut milk and water, scraping the pot to get all the flavors.
Cover and simmer on medium-low heat for about 25 minutes.
Add chopped celery leaves and green seasoning, cover, and simmer for another 10-15 minutes.
Taste for salt and adjust as necessary, adding more coconut milk if desired.
