Stove-Top Roasted Breadfruit

Cultural Context

Breadfruit, native to the Indo-Pacific region, has become a staple in Jamaican cuisine. Traditionally roasted over an open flame or in a hot oven, stove-top roasting offers a convenient method to enjoy this versatile fruit. It's often served as a side dish, celebrated for its starchy texture and ability to absorb flavors. Today, breadfruit is embraced globally, with variations in preparation reflecting local culinary traditions.

1

Remove the stem from the breadfruit by pushing a sharp knife deep where the stem meets the breadfruit, making 3 to 4 cuts.

2

Wash the breadfruit under fresh running water, optionally using salt or distilled white vinegar to clean it.

3

Make a cut halfway into the breadfruit through the navel, then carve an X on the bottom for ventilation.

4

Place the breadfruit over the flame of a stove set to medium-low (gauge 4).

5

Roast the breadfruit for 50 minutes on one side, then rotate it to the next side for another 50 minutes.

6

After 15 minutes on the second side, rotate it again for an additional 15 minutes.

7

Continue rotating every 15 minutes until a total of 1 hour and 30 minutes of roasting is complete, ensuring each side is evenly cooked.

8

After roasting, turn the stove to very low and allow the breadfruit to steam for 5 to 10 minutes.

9

Wrap the hot breadfruit in damp newspaper and let it rest for 10 to 15 minutes to make peeling easier.

10

Peel the breadfruit starting from the bottom, rotating it as you go, and trim off any remaining skin or blemishes.

11

Cut the breadfruit in half, then slice it into smaller pieces for serving.
