Wash and pat dry the breadfruit with a paper towel.
Make an 'X' at the bottom of the breadfruit to help it cook evenly.
Make another 'X' at the top of the breadfruit, going through the stem if necessary.
Place the breadfruit in a cooking tray and put it in the preheated oven at 400°F (200°C) for 1 hour.
Check if the breadfruit is done by seeing if the 'X' is open and if a knife goes through easily.
Let the breadfruit cool, then peel and slice it into half-inch thick slices.
Heat canola oil in a clean saucepan over medium flame.
Fry the breadfruit slices until golden brown, turning them over to fry both sides.
Sprinkle sea salt on the fried breadfruit while hot.
Prepare a can of mackerel by removing the bones and heating it with coconut oil, natural seasonings, and vegetables in a pot.
Add the canned mackerel to the sautéed vegetables, season with black pepper, and let it simmer for a minute.
