Koupes, a beloved dish in Cyprus, is a variation of the Middle Eastern kibbeh, reflecting the island's rich culinary history. Traditionally made with ground lamb and bulgur, these savory dumplings are often enjoyed during festive occasions and family gatherings. Today, they have gained popularity beyond Cyprus, with many variations emerging globally, showcasing diverse fillings and cooking methods.

Prepare fine cracked wheat by mixing it with salt, pepper, olive oil, cumin, cinnamon, and boiling water.
Cover the mixture and let it rest for at least three hours.
After resting, mix in flour, mashed potato, and baking powder until well combined.
For the filling, fry minced pork with olive oil, spring onions, and chopped onions until the meat changes color.
Add cumin, cinnamon, salt, and pepper to the meat mixture and cook for about ten minutes.
Stir in toasted pine nuts and chopped parsley once the meat has cooled.
Take a portion of the shell mixture, roll it into a ball, and shape it into a thin shell.
Fill the shell with the meat mixture and seal it, shaping it as desired.
Place the filled koupe on a tray and refrigerate for at least one hour before frying.
Fry the koupe in hot oil until golden brown.
