This sweet pastry showcases the island's rich agricultural heritage, particularly its pumpkins and nuts. Traditionally enjoyed during festive occasions, kolokotes have become a symbol of Cypriot hospitality and are now popular in various forms across Mediterranean cuisines.

Prepare the butternut squash by chopping it into small pieces.
Fry the chopped onion in olive oil until caramelized and brown.
Mix the fried onion with the chopped pumpkin, vermicelli, sultanas, salt, cinnamon, sugar, and coarse cracked wheat in a bowl.
Cover the mixture and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
For the pastry, mix plain flour, vinegar, baking powder, salt, and olive oil in a bowl.
Let the pastry rest for about an hour to prevent shrinking.
Divide the rested dough into six balls and roll each ball as thin as possible.
Cut circles from the rolled dough using a saucepan as a guide.
Place a generous amount of filling in the center of each circle.
Fold the dough over to create a half-moon shape and seal the edges using a fork or by crimping with fingers.
Brush the tops of the pastries with olive oil before baking.
Bake in a preheated oven at 180°C (350°F) for 25 minutes.
