Originating from Cyprus, Bourekia with Anari is a beloved pastry that showcases the island's rich culinary heritage. Traditionally enjoyed during festive occasions, these delightful pastries are filled with sweet anari cheese, offering a unique blend of flavors and textures. Today, they are popular not just in Cyprus but also in various Mediterranean regions, often served as a sweet treat or dessert.
Mix 400 g flour with 1/2 teaspoon salt and melted butter until it resembles breadcrumbs.
Make a well in the center and add water, mixing until the dough is not sticky.
Knead the dough for a couple of minutes into a nice ball, cover with plastic, and let it rest for 30 minutes.
Crush 500 g anari and mix it with 1/3 cup sugar and 1/2 teaspoon cinnamon.
Roll out the rested dough thinly, cut into circles, and fill with the cheese mixture.
Fold the dough over the filling and seal the edges to form dumplings.
Heat oil to 180°C and fry the dumplings until golden brown, flipping them as needed.
Remove from oil and let cool, then sprinkle with a mixture of sugar and cinnamon, and drizzle with honey.
