Preheat the oven to 160°C (320°F).
Cut the lamb shoulder into large chunks.
Season the lamb with salt, black pepper, and paprika.
Heat olive oil in a large skillet over medium heat until shimmering.
Brown the lamb pieces on all sides, about 5-7 minutes.
Remove the lamb and set it aside.
In the same skillet, sauté chopped onions, garlic, and carrots until softened, about 3-4 minutes.
Add lemon juice, white wine, and chopped tomatoes to the skillet; stir to combine.
Return the lamb to the skillet, adding oregano and bay leaves.
Layer sliced potatoes on top of the lamb and vegetables.
Cover the skillet tightly with foil or a lid.
Bake in the preheated oven for 2-3 hours until the lamb is tender and falls apart easily.
Sprinkle crumbled feta cheese and chopped parsley over the dish before serving.
