Lamb Kleftiko hails from Greece, traditionally made by shepherds who would bury lamb in the ground to cook it slowly. This dish symbolizes rustic Greek cooking, emphasizing the use of fresh, local ingredients. Today, Kleftiko is often enjoyed at family gatherings and celebrations, showcasing the rich flavors of Mediterranean cuisine.

Preheat the oven to 180°C (fan-assisted).
Cut the potatoes into wedge shapes and layer them in the bottom of an oven-safe dish.
Slice the red peppers into strips and add them to the dish.
Slice the vine tomatoes into thick slices and scatter them in the dish.
Cut the bulb of garlic in half and place it in the dish.
Place the leg of lamb on top of the layered vegetables in the dish.
Pour 200 mL of water around the edges of the lamb in the dish.
Squeeze the juice of one lemon over the lamb.
Drizzle 60 mL of olive oil over the lamb.
Sprinkle a generous amount of dried oregano over the lamb.
Cover the dish tightly with aluminum foil.
Bake in the preheated oven for 2.5 hours.
After 2.5 hours, check if the meat is pulling away from the bone.
Season the sauce with salt and black pepper to taste.
Add pieces of feta cheese on top of the lamb and vegetables.
Return the dish to the oven (still at 180°C) for an additional 15-20 minutes until the feta is slightly colored.
