Melomakarona are traditional Greek Christmas cookies, originating from Cyprus. These sweet treats symbolize the joy of the holiday season and are often shared with family and friends. The combination of honey and walnuts gives them a unique flavor, making them a beloved dessert not only in Cyprus but also throughout Greece and beyond during festive occasions.

Preheat the oven to 350°F (175°C).
In a large bowl, combine all-purpose flour, semolina, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, mix olive oil, orange juice, sugar, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
Shape the dough into small oval cookies, about the size of a walnut.
Place the cookies on a baking sheet lined with parchment paper.
Bake for 20-25 minutes, until golden brown.
While the cookies are baking, prepare the syrup by combining honey, water, and sugar in a saucepan over medium heat.
Bring the syrup to a boil, then reduce heat and simmer for 10 minutes.
Remove the cookies from the oven and immediately dip them in the hot syrup for a few seconds.
Place the dipped cookies on a wire rack to cool.
Chop the walnuts finely and sprinkle over the cookies while they are still sticky from the syrup.
Allow the cookies to cool completely before serving.
