Cypriot Pastichio

Traditionally served at family gatherings and celebrations, this hearty baked pasta dish features layers of pasta, spiced meat sauce, and a creamy béchamel topping. Today, variations of Pastichio can be found in many Mediterranean countries, each adding their unique twist to this comforting classic.

Fill a pot with boiling water and add salt.
Place a stock cube into the pot on a moderate heat.
Grate the halloumi into the dish.
Peel & dice the whole onion.
Add olive oil to the diced onions & place on a moderate heat.
Once the stock cube has dissolved, start breaking the bucatini in half and placing it into the hot water.
Make sure to keep stirring to avoid sticking.
Add the mince.
Grate the tomatoes.
Add the grated tomatoes to the pot with the mince.
Add Salt, Pepper, Cinnamon, Mint & Parsley.
Drain the water from the pasta into a measuring jug (Make sure to drain well).
Melt some butter in a pan.
Add 4 Tablespoons of plain flour & constantly stir while adding.
To the pasta water add half a pint of milk.
Gradually add the solution to the pan.
Measure a pint of milk and add it to the mixture.
Crack & beat 4 eggs.
Add the eggs to the pan.
Mix until a smooth consistency.
Remove the grated halloumi from the dish leaving a small amount in the base.
Add half the halloumi to pasta & mix.
Add half the sauce to the pasta & mix.
Place a layer of pasta in the dish.
Add a mince layer & spread evenly.
Add the remaining pasta to form another layer.
Take the remaining sauce and spread evenly on top.
Sprinkle the remaining halloumi on top to form the final layer.
Cook at 180°C for approximately 1 hour or until golden brown.
