Preheat the oven to 450F (225C).
Pierce the eggplants with a fork, place them on a baking sheet and roast them for 40-50 minutes, or until soft.
Remove from the oven and allow to cool.
Scoop the flesh out of the eggplants and drain the liquids.
In a food processor, combine the eggplant flesh, garlic, lemon juice, olive oil, tahini, salt, cumin, and paprika.
Process until blended, being careful not to over-process.
Transfer to a serving dish, sprinkle with chopped parsley, paprika, and drizzle with olive oil.
