Preheat oven to 180°C and line a 22cm square brownie pan.

Whisk together the sugar and butter until light and creamy. Add the flour and whisk together.

Spread dough evenly in the bottom of the brownie pan and bake in the center of the oven for around 20 minutes, until the biscuit starts to go a little golden around the edges.

Leave the biscuit base to cool while making the filling.

Melt the butter in a frying pan, then add the kadayif and fry until golden brown.

Remove from heat and stir through the pistachio cream.

Spread the pistachio kadayif mixture over the biscuit base evenly.

Melt the milk chocolate and spread evenly over the top of the pistachio mixture. Then drizzle the pistachio cream over the top and use a knife to create the feather pattern.

Place in the fridge to set.

Cut up the shortbread into portion size pieces.
