Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
In a blender jar, add 1/2 cup instant oats.
Roughly chop and add 1 ripe banana to the blender.
Add 1 large egg to the mixture.
Measure and add 1 teaspoon baking powder.
Add 1 teaspoon vanilla extract (optional).
Add 2 tablespoons maple syrup as a sweetener.
Add 1/8 teaspoon salt to the mixture.
Close the blender jar and blend until a smooth batter forms.
Grease two ramekins with non-stick cooking spray (olive oil) using a pastry brush.
Pour the batter into the two prepared ramekins, filling them only halfway.
Top the batter in the ramekins with raspberries (or strawberries/blueberries).
Place the ramekins into the preheated oven and bake for 30 minutes.
After 30 minutes, check if the baked oats are done by inserting a fork into the center; it should come out clean.
If the center is not cooked, check again after 20 minutes.
Once done, optionally sprinkle powdered sugar on top before serving, or drizzle with maple syrup.
For the Instant Pot version, prepare the batter in two ramekins and add chocolate chips on top.
Add 1 cup of water to the Instant Pot and place a trivet over the water.
Cover the ramekins with a paper towel and then with aluminum foil to prevent moisture from entering.
Place the wrapped ramekins on the trivet inside the Instant Pot.
Close the lid and select the pressure cook setting, setting the time to 30 minutes at high pressure.
After 30 minutes, let the pressure release naturally for 5 minutes, then do a quick release.
Carefully open the lid and remove the ramekins using mitts as they will be hot.
Remove the aluminum foil and paper towel; check if the fork comes out clean to ensure it's cooked.
Transfer the baked oats to a plate, sprinkle with powdered sugar (optional), or drizzle with maple syrup.
