Cut lamb into thick chunks.

Halve and quarter the potatoes.

Cover with foil and bake for 2 hours at 160°C fan.

After 2 hours, remove foil and check lamb and potatoes for tenderness.

Return to oven uncovered for 45 minutes at 170°C.

Let sit loosely covered for 10 minutes before serving.
