Samosa with Tamarind Chutney

Honey is a natural sweetener, while brown sugar is more affordable.
Prepare the dough by mixing all-purpose flour and salt in a bowl.
Add oil to the flour mixture and rub until crumbly.
Gradually add water to form a smooth dough; cover and let rest for 30 minutes.
Boil potatoes until tender, then peel and mash them.
In a pan, heat oil and add cumin seeds; let them splutter.
Add green chilies, ginger, and peas; sauté for 2-3 minutes.
Mix in mashed potatoes, coriander powder, garam masala, and salt; cook for 5 minutes.
Remove from heat and let the filling cool.
Divide the dough into small balls and roll each into a thin circle.
Cut the circle in half to form two semi-circles.
Take one semi-circle, form a cone, and seal the edge with water.
Fill the cone with the potato filling and seal the top to form a triangle.
Heat oil in a deep pan for frying; test with a small dough piece until it sizzles.
Fry the samosas in batches until golden brown, about 5-7 minutes each.
For tamarind chutney, mix tamarind pulp, jaggery, cumin powder, chili powder, and lemon juice in a bowl.
Serve the samosas hot with tamarind chutney.
