1

In a mixing bowl, add 2 cups of all-purpose flour, 1 teaspoon of salt, 1 teaspoon of cumin seeds, and 1/4 cup of ghee.

2

Rub the ghee into the flour until the mixture resembles coarse sand.

3

Slowly add water a little at a time to form a firm dough.

4

Cover the dough with a damp cloth and let it rest for about 15 minutes.

5

Heat 2 tablespoons of oil in a pan over medium heat.

6

Add 1/4 teaspoon of cumin seeds and 1 to 2 finely chopped green chilies; sauté for 1-2 minutes.

7

Add 1 teaspoon of ginger-garlic paste, 1/2 teaspoon of red chili powder, 1/2 teaspoon of cumin powder, and 1 teaspoon of chaat masala, along with 1/2 teaspoon of fennel seeds powder and 1 teaspoon of water; cook for another minute.

8

Stir in 1/2 cup of green peas and 3 to 4 medium-sized boiled and cubed potatoes; mix well and cook for a few more minutes.

Add 1 teaspoon of lemon juice and a handful of chopped cilantro; set the filling aside to cool.

Cut each circle in half to form two semicircles; dab water along the straight edge and fold into a cone shape.

12

Pinch the edge to seal, fill the cone with the potato mixture, and seal the open edge with water.

13

Heat oil in a deep pan over medium to high heat and fry the samosas until golden brown and crispy, about 3 to 5 minutes.
