3/4 cup water
2 tbsp oil
1/2 cup green peas, frozen or fresh
2-3 medium-sized boiled potatoes
2 chopped green chilies
1/2 tsp cracked black pepper
2 tbsp fresh chopped cilantro
1/2 tsp red chili flakes
1/2 tsp coriander powder
1/2 tsp garam masala
1 tsp chaat masala
1 tsp cumin seeds
1/2 tsp amchoor (dried mango powder)
1/2 tsp salt

Add all-purpose flour, salt, and ajwain into a bowl. Mix them well and add oil to the mixture.

Mix all the contents thoroughly and start kneading the flour using water. Continue kneading until the dough is tightened but slightly soft. Cover the dough and let it rest for 15 minutes.

To a pan, add oil and cumin seeds, sauté for 30 seconds.

Add green peas, chopped green chilies, spices, and chopped cilantro. Fry for 1-2 minutes on medium heat.

Slightly mash the boiled potatoes and add them to the masala. Mix and fry for 1 minute.

Turn the heat off and let cool.

Divide the dough into two equal balls. Roll each ball into an even size roti. With a knife, make 8 even lines.

Place potato stuffing inside the lines. Apply water on the lines and all around the samosa roti.

Place the other samosa roti on top and seal it well with the hands. Press ends gently with a fork to seal the ends.

Cut individual samosas with a knife. Press all sides to ensure sealing.

Fry samosas in preheated oil over medium heat. Keep moving them for an even crisp and color. Fry until golden and crispy. Fry in batches.
