1

Mix 1.5 cups all-purpose flour and 3/4 teaspoon salt in a bowl.

2

Add 2 tablespoons of oil and mix until the oil is fully incorporated into the flour, ensuring no lumps remain.

3

Add 1 tablespoon of lemon juice and 1/4 cup plus 2 tablespoons of water to the flour mixture and knead into a soft dough.

4

Wrap the dough in plastic wrap and let it rest for about 20 minutes.

5

In a pan, heat 2 tablespoons of oil and add 1 teaspoon of soaked fennel seeds and 1 teaspoon of whole coriander seeds.

6

Add salt to taste, 1/2 teaspoon of dry mango powder, 1/2 teaspoon of garam masala, 1/2 teaspoon of sugar, 10 sprigs of chopped cilantro, 1 tablespoon of minced ginger, and green chili to taste; mix well.

7

Add 1/2 teaspoon of cumin seeds and 1/8 teaspoon of asafoetida to the hot oil, then add 1/2 cup of green peas and cook for about 2 minutes.

8

Add the prepped potato mixture to the pan and heat everything through.

9

Once the dough has rested, knead it again to even it out and divide it into portions for the number of samosas you want to make.

10

Roll out the dough into an oval shape, cut it down the center, and brush the edge with water.

11

Overlap the edges to form a cone and pinch to seal.

12

Stuff the cone with the potato filling, seal the edges with water, and pinch to close.

13

Heat oil in a pan on medium heat until hot before frying the samosas.

14

Gently place the samosas in the hot oil and fry until golden brown, about 5-7 minutes.

15

Remove the samosas and drain on paper towels.
