500 g mutton minced meat

In a mixing bowl, add 2 cups of all-purpose wheat flour, 1 teaspoon of salt, and 4 tablespoons of vegetable oil.

Pour in 150 ml of boiling water and mix with a spatula to avoid burning fingers.

Add the remaining 150 ml of boiling water and mix well.

Use hands to form the dough; it will be sticky, so add 1/4 cup of dry flour and mix.

Add 2 tablespoons of vegetable oil to the dough and knead until it's soft and not sticky.

Cover the dough and let it rest for 20 minutes.

Finely dice 1 medium onion and slice 1 bunch of spring onion.

Heat a pan on medium heat and add 6 tablespoons of vegetable oil.

Add the diced onions to the hot oil and mix.

Add 500 g of mutton minced meat, 1 teaspoon of salt, and 1 teaspoon of crushed ginger and garlic; mix well.

Cook the minced meat for 10 to 12 minutes, breaking it down into smaller pieces as it cooks.

Once the water has dried out and the meat is cooked, switch off the stove and add the spring onions; mix well.

Allow the filling to cool before using it.

Divide the rested dough into two equal pieces and roll each into a cylinder shape.

Cut out 9 pieces from the cylinders and roll each piece into a round ball.

Press each ball out using fingers to form the covering.

Add about 1 teaspoon of the minced meat filling to the center of the covering.

Pull the edges of the covering around the filling and pinch to seal.

Rub some oil on fingers and flatten the sealed samosas slightly.

Heat vegetable oil on medium heat for shallow frying.

Once the oil is hot, add the samosas and turn them every 10 seconds until golden brown.

Remove the samosas once they are golden brown.
