Set your stove on high and place 1 kg of baby hake fish into a deep frying pan or pot.

Add enough water to cover the fish halfway and steam for 10 minutes without covering it.

After 10 minutes, remove the fish from the stove and pour out the hot water.

Pour cold water over the fish to cool it down quickly.

Once cooled, remove the skin and bones from the fish, placing the cleaned fish into a bowl.

Break the fish into smaller pieces using your hands for a finer texture.

In the same pan, heat 4 to 5 tablespoons of oil until hot, testing with a small piece of onion.

Add the cleaned fish and 6 finely chopped garlic cloves to the hot oil, cooking uncovered for 3 minutes.

After 3 minutes, add the 4 finely chopped green chilies and 1 tablespoon of mixed masala to the pan, mixing well.

Add the chopped onions to the pan and mix everything together, cooking for 5 minutes while stirring every 30 seconds to prevent burning.

After 5 minutes, add 1/2 bunch of chopped coriander and mix it in, allowing it to simmer on low for 2 minutes.

After 2 minutes, check the mixture and ensure it is well combined and aromatic.

Transfer the mixture to one side of the pan to allow excess water to drain out, leaving it for about 5 minutes.
