Heat the pan, add oil, dried lime, chopped garlic and ginger.

Once garlic and ginger becomes fragrant, add the onions and fry until tender.

Add pepper and curry leaves, then pumpkin and carrot. Try not to add too much green pepper as it has a strong flavour.

Add some cilantro for its distinctive aroma, then the spices (turmeric, cinnamon, Emirati seed, black pepper and cumin).

To make sure spices don’t burn, add some water or tomatoes, then tomato paste.

Add salt (only if you have not boiled salty meat).

Add meat with water that it was boiled in, then a bit more boiling water.

Add coriander, then pop the lid on and simmer for 10 to 15 minutes until the meat is tender.
