Wash the dates and soak them in water for 30 minutes. Remove the pits, chop them up, and blend them in a food processor until it forms a dough-like consistency.

Mix in vanilla extract, cocoa powder, cinnamon, and water. Blend well to combine.

Lightly roast the peanuts and almonds, then chop them into small pieces, leaving some texture for crunch. Mix the nuts with the date mixture until it becomes dough-like again.

Roll the mixture into tiny balls and place them in a mold. You can grease the mold if you prefer.

Heat the vegan butter and saffron together. Shred the kataifi pastry and add it to the butter and saffron mixture, along with the chopped pistachios. Heat briefly, and in the final moments, stir in powdered sugar.

Press the kataifi mixture on top of the date balls. For best results, chill the mold in the fridge between layers for 10-15 minutes to set.

Melt the dark chocolate and vegan butter in a double boiler. Let it cool slightly, then pour the chocolate over the balls and sprinkle with chopped nuts or shredded coconut for decoration.
