1 cup roasted kataifi (shredded phyllo)
150g pistachio paste
1/3 cup chopped pistachios
220g unsalted butter
350g chocolate chips
4 large eggs
250g sugar
1 tsp vanilla extract
60g all-purpose flour
1½ tsp baking powder
50g cocoa powder
1 tsp salt
1 tbsp instant coffee (optional, enhances chocolate flavor)
½ cup chopped pistachios

Mix the roasted kataifi, pistachio paste, and chopped pistachios together until well combined. Flatten into a layer and freeze for 1 hour.

Preheat oven to 350°F (175°C).

Melt the butter and chocolate chips together until smooth. Let it cool slightly.

In a large bowl, beat the eggs, sugar, and vanilla until light and fluffy.

Sift in the flour, cocoa powder, baking powder, salt, and coffee. Mix until just combined.

Slowly mix in the chocolate-butter mixture.

Fold in the chopped pistachios.

Pour half of the brownie batter into a greased or parchment-lined pan.

Carefully place the frozen pistachio mix layer on top.

Cover with the remaining brownie batter and smooth the top.
