Melt the white chocolate and drizzle it in the chocolate mold. Optionally, add blue spirulina to the white chocolate and drizzle that in the mold.

Place the mold in the fridge while toasting pistachios and making the gluten-free kataifi.

Prepare the kataifi, break or cut it up, and toast it, or alternatively toast some puffed quinoa or rice vermicelli.

Add melted dark chocolate to the molds, either filling them completely or using a brush to coat the sides. Place in the fridge to set.
