Naan

Sieve the flour with salt, soda bi-carb and baking powder and mix.

In a bowl, break the egg, add sugar, yogurt, and milk, and whisk. Keep aside.

Make a bay in the flour, pour in about ¾ cup of water, and mix gradually until it comes together as a dough.

Knead the dough for 5 to 8 minutes until smooth and not sticky.

Gradually add the egg mixture little at a time while kneading until well incorporated.

Cover the dough with a moist cloth and set aside for 10 minutes.

Add the oil to the dough, knead and punch it, then cover again with a moist cloth and let it rise for 2 hours.

Divide the dough into 6 to 8 equal portions, make balls, and place on a lightly floured surface.

Sprinkle kalonji and melon seeds on the balls, flatten slightly, and set aside for 5 minutes.

Flatten each portion between palms to make a round disc and stretch one side into an elongated oval shape.

Preheat the oven to 375°F.

Place the naans on a greased baking tray and bake for 10 minutes.

Alternatively, place the naan in a moderately hot tandoor for 3 minutes.

For stovetop cooking, place the naan on a tawa until light brown on both sides, then finish cooking directly on the flame.

Apply garlic butter on the naan as soon as it is removed from heat and serve immediately.
