Curried Lambi

Clean the lambi thoroughly, cutting off any unnecessary parts.

Soak the cleaned lambi in lemon or lime juice with hot water for 45 minutes.

After soaking, scrape the lambi to remove excess skin and impurities.

Cut the lambi into bite-sized pieces.

Season the lambi with your choice of seasoning and marinate for half an hour.

In a pot, add aromatics: tomatoes, garlic, onions, and pepper, and cook until fragrant.

Add light curry and dark curry to the pot and fry until thickened.

Add the lambi to the pot and let it dry out.

Add water to the pot to finish cooking the lambi.

Add 1 tablespoon of baking powder to soften the meat.
