The cake's festive nature makes it a staple at holidays and family gatherings, and its popularity has led to adaptations across the Caribbean and beyond, where variations may include different fruits or spices.

Start by sifting 3 cups of all-purpose flour, if desired, to reduce lumps and make the batter lighter.
In a separate bowl, add baking powder, baking soda, nutmeg, and salt to the sifted flour and whisk well.
In another bowl, use a hand mixer to cream unsalted room temperature butter, then add granulated sugar and eggs, mixing until incorporated.
Slowly add in evaporated milk, oil, Haitian vanilla extract, and almond extract, mixing well after each addition.
Gradually add the flour mixture to the wet ingredients, half a cup at a time, mixing gently to avoid overmixing.
Prepare two 7x3 inch pans by spraying them with baking spray and transfer the batter evenly into the pans.
Preheat the oven to 325 degrees Fahrenheit and bake the cakes for 25 minutes.
Increase the oven temperature to 350 degrees Fahrenheit and continue baking for an additional 18 minutes or until a toothpick inserted in the center comes out clean.
While the cake is baking, prepare the icing by whipping unsalted room temperature butter with an electric hand mixer until creamy, then slowly add powdered sugar, rum, and almond extract.
Once the cakes are baked, let them cool completely before icing. If the icing becomes too soft, refrigerate the cake for about 10 minutes to firm it up.
Air fry pineapple rings coated with sugar for 10 minutes, checking periodically to prevent burning.
Cut the caramelized pineapples into small pieces and decorate the top and middle of the cake with them, along with any additional decorations like flowers.
