Cut plantains into long pieces.
Fry the plantains and place them on paper towels to absorb excess oil.
Heat olive oil in a skillet and sauté onion, garlic, bell pepper, green onion, and fresh thyme.
Add ground turkey to the skillet and season with salt, black pepper, poultry seasoning, smoked paprika, and Maggi seasoning.
Stir in pasta sauce and cook until the turkey is done.
Allow the meat mixture to cool before assembling.
Grease a baking pan.
Layer plantains at the bottom of the pan.
Add a layer of ground turkey mixture.
Add a layer of provolone cheese.
Add a layer of egg and then mozzarella cheese.
Add a thin layer of the remaining meat mixture.
Finish with a layer of cheese on top.
Cover the pan with foil and bake at 375°F for 10 minutes.
Remove the foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
