Clean and gut the red snapper, then rinse under cold water.
Pat the fish dry with paper towels and season with lime juice, salt, and black pepper.
Heat oil in a large skillet over medium heat until shimmering.
Add the fish to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through.
Remove the fish from the skillet and set aside on a plate.
In the same skillet, add chopped onions, bell peppers, and garlic; sauté until softened, about 3-4 minutes.
Add chopped tomatoes, thyme, and parsley; cook for another 3-4 minutes until the tomatoes break down.
Pour in water and bring to a simmer; let cook for 5 minutes to combine flavors.
Add hot sauce to taste and adjust seasoning with salt and pepper as needed.
Return the fish to the skillet, spooning the sauce over the top to coat.
Simmer for an additional 2-3 minutes to heat the fish through.
Serve hot with rice or fried plantains.
