In a medium bowl, sauté the onions with 2 tablespoons of oil over medium to low heat in a heavy iron pot.

Once the jalapeno pieces start to cook, add kale and mix it around well.

Mix the pot well and cover again for five minutes, then check if the kale is ready.

Use the same pot to brown the beef rib meat, adding 1 teaspoon of cardamom and 1 teaspoon of dry ginger.

Add the cooked kale into the pot and mix, scraping up the bits from the bottom of the pot.
