Instructions
- 1Slice tempeh into thin strips and steam for 10 minutes to soften.
- 2In a bowl, combine yogurt, tandoori masala, lemon juice, ginger, garlic, cumin, coriander, paprika, salt, and pepper to create the marinade.
- 3Add the steamed tempeh to the marinade and coat thoroughly. Let it marinate for at least 30 minutes, or overnight in the fridge for deeper flavor.
- 4Preheat the grill or oven to medium-high heat (about 400ยฐF).
- 5Thread marinated tempeh onto skewers, alternating with onion and bell pepper pieces.
- 6Brush the skewers lightly with oil to prevent sticking.
- 7Grill the skewers for 10-15 minutes, turning occasionally, until charred and heated through.
- 8Alternatively, place skewers on a baking sheet and bake for 20-25 minutes, flipping halfway through.
- 9Remove from heat and let rest for a few minutes before serving.
- 10Garnish with fresh cilantro and serve with lemon wedges.

Instructions
- 1Preheat the air fryer to 400ยฐF (200ยฐC).
- 2In a bowl, combine the drained chickpeas, olive oil, garlic powder, paprika, salt, and black pepper. Toss until the chickpeas are well coated.
- 3Place the seasoned chickpeas in the air fryer basket in a single layer.
- 4Air fry the chickpeas for 15 minutes, shaking the basket halfway through to ensure even cooking.
- 5While the chickpeas are cooking, prepare the salad by combining the mixed greens, cherry tomatoes, red onion, and cucumber in a large bowl.
- 6In a small bowl, whisk together the lemon juice and balsamic vinegar to make the dressing.
- 7Once the chickpeas are done, remove them from the air fryer and let them cool slightly.
- 8Add the air-fried chickpeas to the salad mixture and toss gently to combine.
- 9Drizzle the dressing over the salad and toss again to coat everything evenly.
- 10Serve immediately and enjoy your air-fried chickpea salad.

- โ1 package egg roll wrappers (about 20)

- โOil for frying
Instructions
- 1In a large bowl, combine the pulled pork, shredded cabbage, shredded carrots, green onions, and BBQ sauce. Mix well until all ingredients are evenly coated.
- 2Lay an egg roll wrapper on a clean surface with one corner pointing towards you.
- 3Place about 2 tablespoons of the filling mixture in the center of the wrapper.
- 4Fold the bottom corner over the filling, then fold in the sides, and roll tightly to seal. Use a little beaten egg to seal the top corner.
- 5Repeat with the remaining wrappers and filling.
- 6Heat oil in a deep frying pan or pot over medium heat until hot.
- 7Carefully add the egg rolls to the hot oil, a few at a time, and fry until golden brown and crispy, about 3-4 minutes per side.
- 8Remove the egg rolls and drain on paper towels to remove excess oil.
- 9Serve hot with additional BBQ sauce for dipping.
