4 Indonesian bay leaves
2-3 kaffir lime leaves
3-4 cm galangal
3 stalks lemon grass
4 tablespoons cooking oil

Prepare the fragrant rice and glutinous rice by rinsing them under cold water until the water runs clear.

In a large pot, heat the cooking oil over medium heat. Add the chopped red onion, garlic, candlenuts, ginger, and galangal, and sauté until fragrant.

Add the chicken pieces to the pot and brown them on all sides.

Pour in the coconut milk and chicken broth, and bring to a simmer.

Stir in the fragrant rice, glutinous rice, chayotes, and the spices (turmeric, coriander, cumin, salt, pepper, and sugar).

Add the bay leaves, kaffir lime leaves, and lemon grass to the pot.

Cover and cook on low heat until the rice is tender and has absorbed the liquid, about 30-40 minutes.

In a separate pot, boil the eggs until hard-boiled, then peel and set aside.

Once the rice is cooked, fluff it with a fork and serve topped with fried onions and sliced eggs. Garnish with red chili peppers and serve on banana leaves if desired.
