4 chicken thighs

Boil 1.5L of water in a pot and add bay leaves, ginger, lengkuas, turmeric, and salt to taste.

Add the chicken thighs to the boiling water and cook until fully cooked.

For the sambal, blend together chilli padi, dried chilli, tomatoes, belacan, garlic, lemon juice, salt, and chicken stock cube until smooth.

Serve the boiled chicken with sambal on the side.
