Sprinkle 1 teaspoon each of salt and black pepper on both sides of 1 pound of sirloin steak and rub it in.
Dice the sirloin steak into about half-inch cubes.
Heat a large heavy skillet over medium heat.
Add 4 pieces of diced thick cut bacon to the skillet and cook until crispy, about 5 to 7 minutes.
Remove the crispy bacon from the pan and let it drain on a paper towel-lined plate, leaving the grease in the pan.
Add 1 diced white onion and 1 diced jalapeno to the bacon grease and sauté until the onions are soft and translucent, about 5 minutes.
Add 4 diced Roma tomatoes to the pan and cook for 1 to 2 minutes until softened.
Scooch the mixture to the side of the pan, add a little olive oil, and then add the diced beef to sear it.
Mix everything back together and add the cooked bacon.
Serve with warm tortillas or over rice, garnished with fresh cilantro.
