1 1/2 Cups rice
1 lb peeled raw shrimp
1/2 sliced onion
100g Onion Leaves
100g Carrots
1 inch piece of ginger
5-6 Cloves of garlic
1/2 tbsp of chili flakes
1 egg
35g Roasted cashew nuts
1/2 Lime
2-3 tbsp of Sweet chili sauce
2-3 tbsp of soy sauce
salt to taste

oil to fry

Prepare the rice a day in advance for better texture.

In a pan, heat oil and sauté sliced onion, garlic, and ginger until fragrant.

Add the shrimp and cook until they turn pink.

Stir in the carrots and onion leaves, cooking until tender.

Add the rice, mixing well with the other ingredients.

Season with chili flakes, soy sauce, sweet chili sauce, salt, and pepper to taste.

Push the rice to one side of the pan and crack an egg on the other side, scrambling it until cooked.

Mix the scrambled egg into the rice.

Serve with roasted cashew nuts and a squeeze of lime on top.
