600ml (600g) Cold Water
Pinch Salt
800g (1.8lb) Chicken Thigh, Boneless & Skinless, Small Dice
2 tsp (10ml) Neutral Oil
Salt & Pepper
4 Garlic Cloves, Finely Minced
3 Shallots, Finely Sliced
1 Red Chilli, Finely Sliced (Optional)
350g (12.3oz) Frozen Mixed Vegetables (Carrot, Peas & Corn)
3 Tbsp (60ml) Kecap Manis
1 Tbsp (15ml) Light Soy Sauce
1 tsp (5ml) Fish Sauce
1 tsp (5g) Sambal Oelek
½ tsp (3g) Shrimp Paste (Optional but authentic)

Prepare the jasmine rice by washing it thoroughly and then combine it with cold water and a pinch of salt in a pot. Cook according to your rice cooker or stovetop instructions until fluffy.

In a large pan or wok, heat the neutral oil over medium heat. Add the minced garlic and sliced shallots, sautéing until fragrant and golden.

Add the diced chicken thighs to the pan, seasoning with salt and pepper. Cook until the chicken is browned and cooked through.

Stir in the red chilli (if using) and the frozen mixed vegetables, cooking until the vegetables are heated through.

Add the cooked rice to the pan, mixing well with the chicken and vegetables.

Pour in the kecap manis, light soy sauce, fish sauce, sambal oelek, and shrimp paste (if using). Stir-fry everything together until well combined and heated through.

In a separate pan, fry the eggs to your liking (sunny side up or over easy).

Serve the nasi goreng topped with a fried egg, garnished with sliced spring onions and crispy shallots.
