Half of a cm ginger root
100g Plain flour

Chop ginger.

Place minced lamb into a bowl and add ginger, white pepper, salt, and 1 Tbsp of oil; mix well.

Slice aubergine into 0.5cm thick slices and then insert a cut between each slice to create a pocket.

Take about 1 tsp of minced lamb and stuff into the pocket until all complete.

Combine plain flour, salt, and eggs to form a batter.

Heat 1 litre of oil in a wok until hot.

Dip stuffed aubergine into the batter mix.

Place into hot oil and deep fry for 2 minutes on each side.

Remove from oil and drain.
