Weigh all ingredients beforehand.

In a large bowl, add 500 grams of flour, 2 teaspoons of baking powder, and a pinch of salt. Mix and set aside.

In another bowl, add 2 eggs and beat them. Set aside.

In a separate bowl, add 250 grams of sugar and 3/4 of the egg mixture, reserving 1/4 for glazing. Add 1 teaspoon of vanilla extract, combine, and pour into the flour mixture.

Weigh 250 grams of butter and make sure it is slightly colder than room temperature. Massage the butter into the flour mixture to form a dough.

Take 1/4 of the dough for the top crust and roll it thin between plastic wrap. Place it in the fridge or freezer.

Roll out the remaining dough to about 35-37 centimeters in diameter.

Butter a 23-centimeter cake form and line it with the rolled-out dough, pressing it into the sides.

Set aside 100 grams of raisins in water to swell.

Peel and cube 1 kilo of apples, pour lemon juice over them, and add the raisins, 75 grams of sugar, and 1-2 tablespoons of cinnamon. Mix well and set aside.

For the custard, beat 4 egg yolks with 50 grams of sugar and 1 tablespoon of cornstarch. In a saucepan, heat 200 milliliters of milk and 1 teaspoon of vanilla extract until boiling. Remove from heat and whisk in the egg mixture, then return to heat until thickened. Let cool.

Layer a thin layer of custard in the pie crust, add the apple filling, and top with more custard if desired.

Use the remaining dough to create stripes or crumble over the top. Brush with the reserved egg mixture.

Preheat the oven to 170 degrees Celsius (340 degrees Fahrenheit). Bake the pie for about one hour until golden brown.

Let the pie cool completely before serving. Serve with whipped cream.
