Cultural Context
Biko is a traditional Filipino rice cake made from glutinous rice and coconut milk, often enjoyed during festivals and special occasions. It represents the rich agricultural heritage of the Philippines, showcasing the use of local ingredients. Today, Biko is a beloved dessert not only in the Philippines but also among Filipino communities worldwide, often served during celebrations and family gatherings.

Rinse glutinous rice under cold water until water runs clear.
Soak glutinous rice in water for at least 4 hours or overnight.
Drain the soaked rice and place it in a pot with water.
Cook the rice over medium heat until water is absorbed and rice is tender, about 20-25 minutes.
In a separate pot, combine coconut milk, brown sugar, and salt.
Heat the coconut mixture over medium heat until sugar dissolves, stirring occasionally.
Add the cooked rice to the coconut mixture and mix well.
Continue to cook the rice mixture over low heat, stirring constantly until thickened, about 10-15 minutes.
Prepare a baking dish by lining it with banana leaves, leaving some overhang.
Transfer the rice mixture to the prepared dish and flatten it evenly.
Melt margarine and brush it over the top of the rice mixture.
Sprinkle sesame seeds on top for garnish.
Cover with banana leaves and steam for 30 minutes.
Remove from heat and let cool before slicing into squares.
